Girl Scout Garbage Casserole

Introduction

Number of Servings: 6

Ingredients

    4 eggs
    4 eggs whites
    3 small potatoes
    1 cup 1% milk
    1/2 roll mild pork sausage (could substitute with turkey sausage, bacon, turkey bacon)
    1 tsp salt
    1 tsp black pepper

Directions

* preheat oven to 350 degrees
* wash potatoes and cut into 1/2 inch cubes, place on cookie sheet that has been lightly sprayed, bake in oven for 10-15 min
* crumble and brown sausage over med heat
* mix eggs, egg whites, milk, salt, and pepper in small bowl (I used both bc I'm trying to gradually make healthier food so as not to scare off the kiddo and hubby, you could certainly make it with just egg whites)
* when sausage is browned, drain and rinse
* place sausage back in skillet, add potatoes, then pour egg mixture over top
* cook as you would scrambled eggs
* enjoy
