Number of Servings: 8

Ingredients

    2 cups uncooked brown rice
1.5 pounds lean ground beef (can substitute ground turkey)
    1/2 tsp salt
    1/2 tsp pepper
    1 cup chopped onion
    1 cup chopped bell pepper
    1.5 15-oz cans tomato sauce
strips/squares of bell pepper to line dish
    4 slices mozzarella cheese

Directions

Cook rice according to package directions, omitting any salt and/or butter. In skillet, brown ground beef with onion and chopped bell pepper, adding salt and pepper.
When rice is done, add beef mixture and tomato sauce and mix well. Line bottom of 2.5 quart casserole dish with bell pepper strips/squares. Pour rice mixture on top. Lay cheese over the top.
Bake at 350 for 20-30 minutes, long enough for the cheese to bubble and begin to brown.

This was lacking something... spices, maybe. I think if you substitute the tomato sauce w/ a jar of already seasoned Ragu this recipe would be just perfect!! Otherwise, it was really good!! I added a bit of garlic powder. I will DEFINITELY try it again w/ seasoned sauce. The prep wasn't so bad! - 9/18/08

Really good! I added some diced tomatoes and garlic. I like things spicy so I also added cayenne, red pepper flakes and hot pepper sauce - made it perfect for my tastes! - 2/27/10

Sounds fantastic and I like the idea of peppers in bottom of the dish rather than trying to stuff half peppers. Thanks and I plan to try it this week! - 8/4/12

  • I will be making this tonight for dinner using 1 can of black beans and 1 can of corn drained instead of the rice and shredded cheese instead of cheese slices. The leftovers are great wrapped up in a tortilla. Yum! - 8/3/12

  • This was great. I used ground turkey instead of the beef. I also added a little cumin and garlic when cooking the meat/onions/peppers. Subbed the mozzerella cheese for pepper jack cheese. - 1/30/10
