Whole Grain Banana Bread

Lower in sugar, and fat. This banana bread is very sweet and flavorful without extra calories.

Number of Servings: 24

Ingredients

    3/4 cup sugar
    1/2 cup unsweetened applesauce
    1/4 cup canola oil
    2 eggs
    1 1/2 cup mashed banana (3 medium)
    1/2 cup low fat buttermilk
    1 teaspoon vanilla extract
    1/4 cup packed raisins
    1 teaspoon ground cinnamon
    2 cup whole wheat flour
    1 teaspoon baking soda
    1 teaspoon salt


Directions

1. Preheat oven to 350.
2. In large bowl, whisk together sugar, apple sauce and oil .
3. Add eggs. Whisk.
4. Mash bananas and add to mix.
5. Add buttermilk and vanilla and mix with a spoon.
6. Add raisins and cinnamon. Mix.
7. Add flour, salt and baking soda.
8. Bake in oven for 1 hour.
9. Let cool.



Makes 1 loaf with 24 slices.
