Mediterranean Quinoa

This is a quick and healthy side dish for dinner and makes enough for several lunches as well. This is a quick and healthy side dish for dinner and makes enough for several lunches as well.Number of Servings: 9
Ingredients

3 cups water
1.5 cups dry quinoa
2 tablespoons Olive Oil
1 cup red onion, small dice
1 cup celery, small dice
1 cup carrot, small dice
1 cup red bell pepper, small dice
2 cups zucchini, medium dice
1/2 tsp red pepper flakes
2 tsp granulated garlic
2 Tablespoons Balsamic Vinegar
Salt to taste
Directions
Place water and quinoa in large sauce pan and bring to boil. Cover and simmer for 10-15 minutes, until water is absorbed and grain is tender and translucent.
In large saute pan, heat olive oil. Add onion, celery, carrots and pepper and cook for about 5 minutes or until veggies begin to soften. Add chopped zuchinni and cook for just a few minutes more. Add granulated garlic, red pepper flakes and salt to taste.
Combine cooked quinoa and veggies - add balsamic vinegar.
Makes 9 one cup servings
