Blue's Turkey & Chorizo Chili

Introduction

A variation of a Rachel Ray recipe that is low-calorie and yum-o!! A variation of a Rachel Ray recipe that is low-calorie and yum-o!!
Number of Servings: 12

Ingredients

    1 lbs. Ground, Lean Turkey or Chicken
    5 Tbsp. Chili Powder
    2.5 Tbsp. Ground Cumin
    1 Tbsp. Extra Virgin Olive Oil
    8 oz. Chorizo Sausage (I used vegetarian)
    .5 Tsp. Salt
    .25 Tsp. Black Pepper
    .5 Tsp. Cayenne Pepper
    1 Medium to Large Chopped Onion
    1 Tbsp. Garlic Powder
    1 6 oz. Can Tomato Paste
    1 Large Can Diced Tomatoes
    1 Large Can Tomato Sauce
    1 Can Water (use the tomato sauce can)
    1 Can Great Northern Beans (rinsed)

Directions

Brown ground turkey over medium high heat in olive oil until brown, add onions and garlic powder, continue to cook until onions are translucent. Add chili powder, ground cumin, salt, pepper and red pepper, Mix thoroughly. Add Chorizo cut into bite sized pieces (take out of skin). Continue to cook until chorizo is also browned. Add can of tomato sauce, crushed tomatoes, tomato sauce and beans. Add water if needed. Cook covered for 45-60 minutes over medium low heat (enough to just simmer).

Serve over Brown Rice or add 1 Tabsp. of low-fat, grated, Cheddar Cheese (rice nor cheese included in calorie calculations).
