Low-Fat Papaya Seed Dressing

Introduction

I had this Salad Dressing in Hawaii and loved it. When I got home, I looked up the recipe and was shocked that it had between 1 & 2 cups of oil in each recipe. Ingredients

    1 Tbsp. Cornstarch
    1/2 cup Cold Water
    1 Ripe Papaya (include Seeds), peeled
    1/2 Sweet Onion
    1-1/2 Tsp. Dry Mustard
    1/2 Tsp. Salt
    1/2 cup Splenda
    1/2 cup Water
    2 Tbsp. Extra Virgin Olive Oil (or Canola)
    1/2 cup Rice Vinegar (or Cider Vinegar)

Directions

Dissolve the cornstarch in cold water. Place in microwave on high for 30 seconds. Remove and stir. Replace and cook another 30 seconds, watching to make sure it boils. Remove and stir the thick clear goo. Set aside to cool.

Place the onion in the food processor and mince. Add the papaya (& seeds) and pulse. Add the dry mustard, salt, splenda, vinegar, water and oil. Pulse to combine. Add the cornstarch mixture and pulse again. Store tightly covered in the refrigerator.
