Mediterranean Pasta with kalamata olives and spinach

Introduction

This yummy pasta dish will make the whole family happy. You can spice it up with some dried red peppers, or add more garlic, but it's great prepared just as the recipe states. This yummy pasta dish will make the whole family happy. You can spice it up with some dried red peppers, or add more garlic, but it's great prepared just as the recipe states.
Number of Servings: 6

Ingredients

    diced tomatoes, thin spaghetti, kalamata olives, fresh spinach, fresh basil, fresh oregano, fresh garlic

Directions

Chop garlic and saute in 2 tbsp. of olive oil until brown, add 1/4 cup chopped kalamata olives and saute for a few minutes. Add diced tomatoes and allow to simmer 15 minutes. Serve over thin spaghetti or pasta of your choice. Top with grated parm. cheese, if desired.

You can also add 2 tbsp. of chopped fresh basil, and 1 tbsp of chopped fresh oregano if you have it available.

Makes 6 one cup servings.
