Shrimp Lo Mein

Submitted by: SUSANCARRINGTON

Introduction

This is a giant batch and you may want to cut all quantities in half if you don't have a big wok. Sodium can be reduced if you omit the chicken base, but flavor will be less pronounced. Ingredients

12 oz pkg (Roland Lo Mein noodles
    6 Tbsp (Kikkoman) oyster sauce
3/4 tsp (Minor's) chicken stock base
    2 Tbsp canola oil
    2 tsp minced garlic
1 Tbsp minced fresh ginger root
    12 oz cooked shrimp, thawed
2 c celery, sliced on the diagonal
2 c broccoli, florets cut small, stems cut thin
    2 c onion, sliced
    2 c mushrooms, sliced thin
    2 c carrots, julienned
    3 c green cabbage, shredded

Directions

Cook lo mein noodles in boiling water until "al dente." Drain and set aside. In a large wok or frying pan, heat 1 Tbsp canola oil over med high heat. Add garlic, onions, ginger and carrots, stirring quickly so that the garlic doesn't burn. After these items begin to wilt, add the broccoli and celery. Continue stir-frying 3 to 4 more minutes. Remove the vegetables to a serving dish. In the same pan, add 1/2 Tbsp oil and heat over med high heat. Add mushrooms and cabbage and stir-fry until wilted, 3 to 4 minutes. Revmove vegetables to the serving dish. Add the remaining 1/2 Tbsp oil to the pan and heat over med high heat. Add the noodles and stir/toss to coat with the oil. Add the oyster sauce, chicken base, and shrimp and mix well, making sure the sauce and chicken base are well distributed throughout the noodles. Add the vegetables back into the noodle mixture and heat through, stirring to incorporate the vegetables into the noodles and shrimp. Makes 6 generous servings.
