Introduction

Ingredients

    Red Onion (1/2 cup)
    Bell Peppers (1/2 cup)
    3 Cloves of Garlic
    Celery (1/4 cup)
    Grape Tomatoes (1/2 Cup)
    Sesame Seeds (1 tbsp)
    Eggplant (317 grams)
    Juice From One Lemon
    Liquid Smoke (Hickory) 1 Tsp
    Spices to taste

Directions

Heat 1 Tbsp of Olive Oil in non-reactive pan. Add onion, peppers, garlic, celery, tomatoes and sesame seeds and saute. Dice eggplant and add to mixture. Add remaining olive oil and stir around. Cover and put in 350 deg oven for 40 minutes. Remove and puree in food processor. Add Tofu. Process. Add Lemon and spices. Process.
Season to taste.
This version makes about nine 3 oz servings.
