Seitan

Ingredients

    Seitan:
    1.5 cups gluten flour
    2 Tbsp WW flour
    1/2 tsp onion powder
    1/4 tsp garlic powder

    Broth:
    6 cups water
    1/2 cup Frontier Chicken-flavored broth powder
    1/3 cup soy sauce

    Add 1.5 cups warm broth to flour mixture in food processor. Knead into firm dough. Cut into 6 pieces and drop into boiling broth. Simmer on low boil for one hour, turning occasionally.

    For chicken-flavored variation,sub:
    2 Tbsp soy sauce in broth
    Seitan:
    1/2 tsp onion powder, 1/2 tsp garlic powder, 1/2 tsp poultry seasoning mix

    All over instructions the same.

  • LOVE SEITAN! I play around with it by changing the seasonings. I have added liquid smoke (as suggested), Bragg's Liquid Aminos, fennel seed, cumin, corriander and any number of variations. Seitan also freezes well and will work great in the crock pot. - 12/26/10
