Beef Barley Stoup

Introduction

A very thick and filling comfort food. Halfway between soup and stew (stoup). Well worth the time. A very thick and filling comfort food. Halfway between soup and stew (stoup). Well worth the time.
Number of Servings: 16

Ingredients

    1 16 oz. bag of Pearled Barley
    1 Jar Better Than Boullion Beef Base
    2 lbs Chuck Roast, All fat removed, cut into bite size chunks
    2 Cups Grated Carrots
    2 Cups Chopped Onions
    2 Cups sliced Celery
    2 T. Kosher Salt
    16 Cups Water

Directions

Combine all ingredients except Barley and bring to a boil. Simmer 1 hour. Refrigerate until fat solidifiesat top. Skim fat off. Add Pearled Barley and bring to a boil. Simmer another hour, stirring occasionally.

Makes 16, 2 Cup Servings
