Introduction

What a tasty and easy way to sneak in veggies! The cheese is up to you and your personal taste but I find Feta to be the most flavor for very little! My daughter who hates cauliflower and who hate stinky cheese somehow ate this without any complaint. Shhhhh.... What a tasty and easy way to sneak in veggies! Number of Servings: 6

Ingredients

    2 whole eggs
    1 egg white
    3/4 cup of steamed or boiled cauliflower (pureed)
    3 fl. oz. of water
    1 tsp Garlic powder
    pinch of salt to taste
    3 slices of thinly sliced turkey breast
    1/3 cup of feta cheese crumbled
    1/2 tsp of parmesan cheese

Directions

Preheat oven to 420 degrees.
Spray pie pan lightly with olive oil.

In a bowl mix eggs, water and pureed cauliflower (I pureed mine in a small food processor with some of the water).
Add garlic powder and salt to taste.
Sliver and dice the turkey breasts into small pieces. Fold into the egg mixture.
Add feta cheese and mix well.

Pour into pie pan.
Sprinkle the top with parmesan cheese.
Bake in oven at 420 degrees for about 10 mins until the center is set (insert toothpick to see if it comes out clean).

Voila! Serve with some arugula salad and whole wheat toast for a delicious and healthy brunch!

    I've made this several times and each time I DO vary it with some fresh herbs and that seems to add more flavor and zing to it without adding calories. Some other options can be diced ham, onions, mushrooms, grueyere cheese, etc. This is an easy base for anyone's alterations.
