Introduction

Ingredients

    1 cup margarine
    1 cup canola oil
    1 cup confectioners sugar
    1 cup granulated sugar
    2 eggs
    1 TBS vanilla extract
    1/2 tsp cardamom (optional)
    1 tsp baking soda
    1 tsp cream of tartar
    1/2 tsp salt
    5 cups flour
    4 cups chopped dried fruit of your choice
    (I use cranberries, raisins, dates, pruned and apricots)
    1 1/2 cups chopped walnuts

Directions

Cream the margarine and canola oil. Add the sugars and mix til light. Add eggs and vanilla extract. Incorporate well. Add baking soda, cream of tartar, salt, cardamom if using it, and the flour. Mix well. Add the chopped fruits and nuts. Shape into balls, making 9 dozen cookies. Place on lightly sprayed cookie sheets, and flatten. (I use the palm of my hand). Bake for 8 to 10 minutes, Edges should be golden, but be careful, these will burn quickly.
