Blackstrap Quinoa Pancakes

Introduction

A little strange: tastes like molasses cookies, but not so sweet. Doesn't need syrup, just put a little unsweetened applesauce on top. Makes 10 pancakes. They are very filling. Eat slowly. Can be made with a lot less calories: use just 1 egg, less oil, more quinoa, low fat yogurt and milk, but I made it as a 5K recovery meal, so I used whole milk yogurt and regular milk. Ingredients

    Sift:
    3/4 C Flour
    1 t Baking Power
    1/2 t Baking Soda
    1/2 t Cinnamon
    1/8 t Nutmeg
    Mix in a bowl:
    2 T Oil
    2/3 C Milk
    1/2 C Plain Yogurt
    1 C Cooked Quinoa
    1 T Dark Blackstrap Molasses
    2 Eggs
    Add the dry ingredients, mix quickly, and fry like pancakes. Note, they are softer than pancakes and harder to turn. Leave your self room on the skillet.

Directions

Make just like pancakes: sift dry ingredients, mix other ingredients, dump together and stir slightly. Fry like pancakes.
