Calico fish

Introduction

The vegtables keep the fish moist while the bread crumbs add crunch The vegtables keep the fish moist while the bread crumbs add crunch
Number of Servings: 4

Ingredients

    1 lb fish fillets such as cod or halibut. I use white fish
    1c bread crumbs
    1/4 t. basil
    1/3c chopped onion
    1/3c chopped green bell pepper or green and red pepper mixed
    2 tbsp grated carrot
    1/4 c.olive oil
    1 1/2 tsp cider vinegar

Directions

Spray shallow baking dish with no stick cooking spray.Place fish in dish in single layer. In a small bowl combine breadcrumbs, basil, vegtables, oil and vinegar. Spread mixture on fish. Bake at 350 until fish flakes easily, tested with a fork.
Makes four 4 ounce servings.
