Cheddar Chicken

Introduction

Adapted from "Real Simple" magazine recipe. This is the best thing I've eaten since starting my "diet." Super yummy, really easy, and the kids loved it! Adapted from "Real Simple" magazine recipe. This is the best thing I've eaten since starting my "diet." Super yummy, really easy, and the kids loved it!
Number of Servings: 4

Ingredients

    4 boneless, skinless chicken breasts
    15 Ritz whole wheat crackers, crushed
    6 oz shredded cheddar cheese
    1 clove garlic, minced finely
    4 TB of I Can't Believe It's Not Butter, melted
    Salt and pepper to taste

Directions

Crush the crackers, and mix in a bowl with the cheese and garlic. Dip chicken breasts in melted butter, then coat with crumb mixture, pressing firmly so crumbs will stick. Lay on a cookie sheet and top drizzle with any remaining butter and crumb mixture. Bake at 350 degrees for 25-30 minutes, until chicken is cooked through.

Great with wild rice! Serves 4.
