Marinated Zucchini, Salmon & Caper Salad

Number of Servings: 4

Ingredients

    400g smoked salmon
    1 Tbsp olive oil
    1 Tbsp salted capers, rinsed & drained
    2 zucchini, thinly sliced
    1 Tbsp lemon zest
    1/4 cup chervil leaves
    1/4 white wine vinegar
    2 Tbsp olive oil, extra
    Sea salt flakes
    1/2 tsp caster sugar
    1/4 cup feta, crumbled

Directions

Heat a frying pan over high heat. Add the oil and capers and cook for 1 minutes or until capers are crispy. Drain on absorbent paper. Place zucchine in a bowl with capers, lemon zest and chervil. Combine vinegar, extra oil, salt and sugar, add to the zucchini and toss to coat. Marinate for 5 minutes. Arrange salmon on serving plates and top with zucchini and feta to serve.
