Red Sauce - Colleen

Ingredients

    3 T olive oil
    1/2 c minced onion
    6 cloves garlic
    1/2 c minced carrots
    1 tsp salt
    1/2 tsp fresh cracked pepper
    1 14.5 oz can diced Italian tomatoes
    2 8 oz cans tomato sauce
    2 Bay leaves
    2 T Italian seasoning

Directions

In a large pan heat olive oil. Add minced onion, garlic, carrot and salt and pepper. Sauté until soft. Pour in diced tomatoes and tomato sauce. Add herbs. If you don’t have an Italian mix, use 2 teaspoons each of dried basil, thyme, parsley and oregano. Simmer for about 30 min and serve with pasta or any other dish you would use a red sauce. Serving size about 1/2 cup.
