Delicious Vegetarian Tofu Spaghetti Sauce

Introduction

A pleasant alternative to ground beef. Has always been my favorite. Pour over pasta, spaghetti squash or even just vegetables. Yum!!! This recipe can easily be halved. It makes about 10 cups. It makes about 10 cups. Perfect for freezing!
Number of Servings: 10

Ingredients

    4 cups diced vegetables (onions, celeri, peppers,carrots)
    1.5 cups sliced mushrooms
    3 cups diced tofu (i just throw in a full brick)
    1 tsp dried oregano
    2 tsp basil
    2 tsp garlic powder
    5-6 cloves minced garlic
    cayenne pepper to taste
    2 15-oz cans of tomato sauce
    4 tbs low sodium soy sauce
    3 tbs oil ( i use extra virgin olive oil)
    2 or 4 tbs tahini

    In a large pot, Sauté vegetables in olive oil for a few minutes. Add all other ingredients, Simmer for 30 minutes.
