Chicken & Onions in Golden Mushroom Sauce

Introduction

This is one of many variations I've developed to make a quick and tasty dinner with boneless chicken. The secret is to use Seasoned Flour - you can find it in the baking aisle, usually with fried chicken mix. Ingredients

    1 lbs. boneless, skinless chicken breasts
    1/4 cup Seasoned Flour
    4 Tbsp. olive oil
    1 large Vidalia onion, sliced
    1 can Campbell's Golden Mushroom Soup
    1 1/4 cups chicken broth
    1/2 cup dry white wine

Directions

Heat olive oil in large skillet over medium heat. Pound chicken breasts to uniform 1/2" thickness. Cut large breasts in half. Put seasoned flour in a large zip-lock bag. Add chicken breasts, one at a time, and shake to coat evenly with flour. Brown chicken breasts in oil until golden brown; remove from pan and add sliced onions. Cook over medium-low heat until golden brown. Return chicken breasts to pan with Golden Mushroom soup, chicken broth and wine. Simmer, covered, about 20 minutes or until chicken is cooked through. Serve over rice or noodles.
