16 oz. frozen Swai Fillets 2 Large Eggs 1 c Panko Bread Crumbs 1 Tbsp Garlic Powder 3 Tbsp Butter
Cut fillets in half lengthwise, then cut into 3" pieces. Preheat large cast iron pan. Beat eggs in a bowl, mix panko and garlic powder on a plate or small cookie sheet. Dip fillet pieces in egg and then roll in panko. Once pan is hot, add enough butter to coat bottom of pan. Fry fillets for about 4-5 min each side and serve.
