A great way to use up leftover brown rice!

Number of Servings: 4

Ingredients

    2 cups cooked brown rice
    1 can black beans, rinsed (can use white beans instead)
    1 cup shredded romaine lettuce
    1 chopped tomato
    1 cup chopped green pepper
    3/4 cup salsa
    1/4 cup cilantro (optional--in nutrition)


Directions

Place rice, beans, and half of lettuce, tomato, pepper and onions in a microwave safe bowl. Mix and cover, heating 3 minutes. Stir well and heat 2 more minutes.

Stir in remaining ingredients and serve.

Yields 4 servings (could be 2 servings if main dish)
