Sweet Potato-Peanut Bisque

    1 large sweet potato (10-12 oz.)
    1/2 small yellow onion, chopped
    1/2 Tbsp. olive oil
    1/2 garlic clove, minced
    1 1/2 cup low sodium tomato juice
    1 cup vegetable broth
    2 oz. diced chilies, drained
    1 tsp. fresh ginger
    1/2 tsp. allspice

    Cilantro and pepper to taste (not in nutrition)


Stab sweet potato all over and heat in microwave for 7-10 minutes. Set aside to cool.

Heat oil in saucepan on medium-high heat and add onion until brown, about 2 minutes. Add garlic and cook another minute.

Stir in juice, chilies, ginger and allspice. Adjust heat to boil gently for 10 minutes.

Peel potato and chop, adding half to the pot.

Put the rest of the potato in a blender with veggie broth and peanut butter. Puree.

Add blended mix to pot and stir. Thin the bisque with water if desired. Season with pepper and heat until hot. Garnish with cilantro if desired.

Yields about 3 cups
