Ingredients

2 cups cooked quinoa
1 whole cucumber
1 whole tomato
1 tbsp olive oil
salt and pepper to taste
lemon juice to taste
Directions
Cook quinoa as directed, chop tomato and cucumber, add tbsp of olive oil and lemon juice. Mix well and serve chilled.
