HCG Phase 3 Cream of Broccoli Soup

HCG Phase 3 Cream of Broccoli Soup

Number of Servings: 6

Ingredients

    1 onion
    1 celery stalk
    8 cups fresh broccoli
    3 cups chicken broth (homemade recommended)
    2 cups nonfat milk
    16 ounces cottage cheese
    salt, if needed

Directions

Roughly chop onion and celery. Combine with 3 tablespoons chicken broth and heat over medium heat until tender. Add 8 cups broccoli and remaining broth. Cover and Simmer for 10 minutes. Once broccoli becomes tender, use an immersion blender to blend ingredients together. Add milk and cottage cheese. Simmer an additional 20 minutes to thicken soup to desired consistency.

    is it suppose to be 3 cups or 3 tablespoons of chicken broth?.... the ingredients and directions don't match up. - 5/10/10

    As the recipe states, use 3 tablespoons with the celery and onion and then add the remaining portion of the 3 cups when you add the broccoli. The first 3 tablespoons are used in place of butter to cook down the aromatics. The remaining 2 cups and 13 tablespoons are needed to make the dish a soup.
