Ingredients

    3 1⁄2 cups shredded carrots
    1⁄2 cup plain, low-fat yogurt, drained of any
    excess liquid
    1⁄2 cup crushed pineapple, no sugar added
    1 Granny Smith apple, not peeled, diced
    into 1/2-inch pieces

1. In a mixing bowl, combine the carrots, yogurt,
pineapple, and chopped apple.
2. Cover and chill for at least 10 minutes before
serving.

Feel free to add another appleóand if you donít have pineapple on hand, consider raisins, nuts, or grapes. I sometimes sprinkle celery seed or poppy seeds on top for a more adult flavor.

    Seeing this recipe with the "optionals" is like watching a car advertisement, where in the small print disclaimer they tell you you're not seeing the car as priced, but with "options." 1 Tbsp of poppyseed adds about 46 calories to the dish. The optional celery... go absolutely wild with it! - 9/21/12

    Reminds me of the old fashioned "carrot salad" with lots of mayo, sugar, pineapple and raisins. I recently tried a recipe with non fat Greek yogurt, raisins, Libby's Skinny Fruits pineapple topped with walnuts (CDE said "ok"). I like this variation with apples.   • made with fresh sweet carrots from the garden, and grapes since I am aleric to pineapple, the sprinkle of celery seed on top added some good flavor, I did sprinkle the apples with some lemon juice since no acid from the pineapple. - 8/24/14

  • This is way too bitter! While it would change the nutritional content, I believe I would use a sweet apple and lowfat vanilla yogurt. I might use raisins or craisins instead of the pineapple which Chef Meg says you can use instead of the pineapple. However, I do like pineapple too. - 9/29/13
