Ingredients
-
Crust:
4.5 ounces whole wheat flour (about one cup)
1 cup quick cooking oats
1/4 cup Splenda Brown Sugar Blend
1/4 tsp baking soda
1/4 tsp cinnamon
6 tbsp margarine, melted
3 tbsp orange juice
Filling:
1 1/3 cups dried cranberries
3/4 cup nonfat vanilla Greek yogurt
6 packets Truvia
2 tbsp whole wheat flour
2 egg whites, lightly beaten
Directions
Preheat oven to 325 degrees.
To prepare crust:
In medium bowl, whisk together the flour, oats, Splenda Brown Sugar Blend, baking soda and cinnamon. Pour melted margarine and orange juice over mixture and stir to combine. Reserve 1/2 cup of mixture (for topping) and press the remaining mixture into the bottom of an 11X7 baking dish (I used two 8x8 baking dishes) that has been coated with cooking spray.
To prepare filling:
Combine cranberries, yogurt, Truvia and remaining ingredients in a medium bowl, stirring well. Spread cranberry mixture over prepared crust. Evenly crumble reserved topping over filling.
Bake for 40 minutes or until edges are golden. Cool completely in pan on a cooling rack before serving.
Makes 24 squares, 1 square per serving.
