Diabetic Conversion for Filling:
Splenda Powdered
or

Number of Servings: 12
Ingredients
-
PIES-
1/4 cup sunflower oil
1/4 cup unsweetened cocoa
2 tablespoon lowfat milk
1/2 cup Honey
1/2 cup whole grain white flour
1/2 cup unbleached enriched flour
1/2 teaspoon vanilla extract
1 large egg white
1/2 teaspoon baking soda
FILLING-
2 oz. softened naufchatel cheese
1/2 tablespoon lowfat milk
1/4 teaspoon vanilla
Sprinkle of Cinnamon
Directions
1. Preheat oven to 350
2. Mix first four ingredients together
3. Add remaining ingredients and mix until smooth and shiney
4.Spray bottom of medium sized muffin tins and fill only bottom with batter
5. Bake for 7 minutes
6. Repeat until all of batter is used (makes about 24 pies or 12 whoopie pies)
7. Combine all of the filling ingredients together
8. When pies are cool ice them and assemble them
9. Chill in the refrigerator for at least an hour
10. Enjoy
