Number of Servings: 6

Ingredients

    6 4-oz boneless, skinless chicken breasts
    1 can 14.5-oz fire roasted tomatoes
    4 oz Goat Cheese (The Pampered Goat)
    4 T finely slivered fresh basil leaves

Directions

Preheat oven to 350 degrees.
Season chicken with salt & pepper
Place ovenproof nonstick skillet over high heat
Add chicken and cook until brown on both sides
Remove pan from heat and divide tomatoes & goat cheese evenly among chicken breasts (about 2 T tomatoes & 1 T cheese).
Transfer skillet to oven and cook until no longer pink inside.
