Parmesan Meatloaf

Introduction

Moist and delicious, this is a real family favorite. Moist and delicious, this is a real family favorite.
Number of Servings: 6

Ingredients

    1 lb 93% lean ground beef
    1 Cup 1% milkfat (lowfat) cottage cheese
    1 Cup quick rolled oats
    1/2 Cup onion, chopped
    2 Tbsp yellow mustard
    1 tsp salt
    2 egg whites, beaten
    1/2 Cup catsup
    1/3 Cup Parmesan cheese

Directions

Preheat oven to 350.

Thoroughly mix all ingredients except the parmesan cheese. Lightly pack minture into a loaf pan and bake for 30 minutes. Remove and sprinkle with parmesan cheese. Bake additional 10 minutes. Remove from oven and let rest 5 minutes before cutting.

If mixture seems too moist, add additional oatmeal, wheat germ, or dry milk.

Makes 6 good-sized servings.
