Garlic Beef-Broccoli Stir-Fry

Ingredients

1 tbsp extra virgin olive oil
13 oz beef eye of round, cut into thin strips
1 cup fat-free, low-sodium chicken broth
4 garlic cloves, minced
1 1/2 tbsp cornstarch
1/4 - 1 tsp crushed red pepper
1/4 tsp salt
1 red bell pepper, cut into thin strips
2 cups fresh broccoli florets
2 tbsp low-sodium soy sauce
Directions
Heat a large nonstick pan over medium-high heat until hot. Add 1/2 tbsp oil to pan and tilt to coat evenly. Add beef and stir-fry 5 minutes or until beef is no longer pink in center. Remove beef and set aside. Combine broth and next 4 ingredients in a small bowl; stir until cornstarch dissolves. Set aside. Add remaining 1/2 tbsp olive oil to pan; add bell pepper strips and broccoli; stir-fry about 2 minutes. Increase heat to high. Stir broth mixture and add to pan with soy sauce, beef, and any accumulated juices. Bring to a boil; cook 1 to 2 minutes or until slightly thickened. Yield: 4 servings (serving size: 1 1/2 cups).
