Gary's Mom's Pineapple Rhubarb Pie

Introduction

Not low calorie, but one of my husband's favorites that his mother used to make for him. Not low calorie, but one of my husband's favorites that his mother used to make for him.
Number of Servings: 8

Ingredients

    2 cups rhubarb, cut into chunks
    2 cup pineapple, crushed
    1 tablespoon tapioca
    3/4 cup sugar
    1/4 cup flour
    1 tablespoon brown sugar
    2.5 tablespoons butter, cold

Directions

Stir together first 4 ingredients and pour into unbaked pie shell placed in 9-inch pie pan. Use a pastry blender to mix the flour, brown sugar and butter into a crumb topping and sprinkle over the rhubarb/pineapple mixture. Bake at 400 degrees for 30-40 minutes. Serves 8.
