These are great! You can start it in the morning and dinner is ready when you get home. My whole family loves it.
Number of Servings: 6
Ingredients
-
1 1/2 pounds pork tenderloin
1 cup prepared barbeque sauce (I like Stubbs)
1 onion, minced
1 1/2 tsp ancho chili powder
6 kaiser or soft sandwich rolls, split
6 pickle wedges
Directions
1.) Spray a large nonstick pan with nonstick spray and set over medium-high heat. Add the pork and cook until browned on all sides, about 6 mins. Transfer the pork to a cutting board. When cool enough to handle, cut the pork into 3/4" chunks and transfer to a 5 or 6 quart slow cooker.
2.) Stir together the barbeque sauce, onion and ancho chili powder in a small bowl; add to the pork and mix well. Cook, covered, until the pork is fork tender, 3-4 hours on high or 6-8 hours on low.
3.) With two forks or with your finger, shred the pork. Spoon 1/2 cup of the pork mixture onto each roll; serve with pickle wedge.
