Lois's Siesta Potato Salad

Introduction

A variation on potato salad. Use reduced calorie or reduced fat where you desire. A variation on potato salad. Use reduced calorie or reduced fat where you desire.
Number of Servings: 18

Ingredients

    Assemble in a large bowl and then refrigerate 2 hours or more.
    Combine:
    6 cups cooked, cubed Yukon Gold potatoes
    1 1/2 cup shredded cheddar cheese, 2%
    2/3 cup black beans rinsed and drained (Use Bush's)
    2/3 cup chopped sweet red pepper
    1/2 cup thinly sliced celery
    2 TBS minced flathead parsley

    Combine in a small bowl:and chill. Pour over potato mix.
    3/4 cup ranch dressing
    1/2 cup chunky salsa
    1/2 teas. salt (optional)

Directions

Cook, peel and cube potatoes

  • Good recipe but you forgot the 1/3 cup thinly sliced onion. That makes it better. You can use your favorite reduced fat or calorie ranch dressing instead. - 5/11/10
