Assemble in a large bowl and then refrigerate 2 hours or more.
6 cups cooked, cubed Yukon Gold potatoes
1 1/2 cup shredded cheddar cheese, 2%
2/3 cup black beans rinsed and drained (Use Bush's)
2/3 cup chopped sweet red pepper
1/2 cup thinly sliced celery
2 TBS minced flathead parsley
Combine in a small bowl:and chill. Pour over potato mix.
3/4 cup ranch dressing
1/2 cup chunky salsa
1/2 teas. salt (optional)
