Meghan's Portabella Mushroom Caps

Ingredients

    2 large Portabella Mushroom Caps, stems removed
    3/4 cup Vodka sauce
    1-2 slices part-skim mozzarella cheese
    Pinch of Parmesan Cheese, grated/shredded
    Fresh chopped Basil

Directions

Preheat oven to 400 degrees. Clean mushrooms with damp paper towel and remove stems and remove gills, if you like. Line baking dish with foil and spray non-stick spray so mushrooms do not stick. Place 2 mushroom caps and fill with 1/4-1/2 cup vodka sauce, then a pinch of parmesan cheese, then lay on top 1-2 slices mozzarella cheese. Pop in oven and cook for 12-15 minutes or until tender and cheese is bubbly. Top with chopped, fresh basil and enjoy!
