Ingredients

    •Jennie-O, Lean Ground Turkey (w/ natural flavorings) 4 oz. = 112 g, 20 oz
    •1 T of Extra Virgin Olive Oil
    •Tostito's, Chunky Mild Salsa, 26 tbsp = 1 Jar
    •Onions, raw, 1/2 medium (2-1/2" dia) (Diced)
    •Campbell's, Healthy Request Cream of Mushroom, 1.5 cup = 1 Can
    •Whole Kernel Golden Corn (Frozen), 454 gram(s) = 16 oz.
    •Bush's, Dark Red Kidney Beans, 16 oz = 1 Can
    •Bush's, Black Beans (Reduced Sodium), 15 oz = 1 Can
    •Del Monte, Diced Tomatoes (No Salt Added), 1.75 cup = 1 Can
    •Seasonings to Taste is actually APRILDAWN678's Taco Seasoning (Low Sodium Substitute--use only 2 T of the combined ingredients that are listed below)

    - 1 T. Chili Powder
    - 2 t. Onion Powder
    - 1 t. Ground Cumin
    - 1 t. Garlic Powder
    - 1 t. Paprika
    - 1 t. Ground Oregano

Directions

In a large skillet heat 1 T of Extra Virgin OLIVE OIL

Add 1/2 medium ONION (Diced) and GROUND TURKEY, Cook until Brown

Place Cooked GROUND TURKEY and DICED ONIONS in the bottom of the crock pot.

Sprinkle with the low-sodium TACO SEASONING MIX

Add ingredients in the following order:
1. Cream of Mushroom Soup
2. Black Beans
3. Kidney Beans
4. Chopped Onions
5. Whole Kernel Corn
6. Diced Tomatoes
7. Mild Salsa

Set crockpot to cook on high for one hour.

Stir and monitor periodically as cooking times may vary based on the type of crock pot that is used.

Once done you can serve with Baked Scoops or Brown Rice. Feel free to garnish with lowfat shredded cheese and/or lowfat sour cream. [Note: Garnishments not calculated in the nutritional information for this recipe].
