Turkey Sausage Jambalaya

Introduction

This is a favorite of mine and practically a meal in itself. It is low sodium and has peppers, onions, and tomatoes added. This is a favorite of mine and practically a meal in itself. It is low sodium and has peppers, onions, and tomatoes added.

Ingredients

    8 oz box Zatarain's Reduced Sodium Jambalaya Mix
    2 1/2 C HOT Water
    1/4 Large Red Pepper (diced)
    1/4 Large Yellow Pepper (diced)
    1/4 Large Orange Pepper (diced)
    1/6 Medium Vidalia Onion (diced)
    8 oz Can Stewed Tomatoes
    8 oz Smoked Turkey Sausage

Directions

In 2 quart microwavable dish, add 2 1/2 C HOT water and empty box of Zatarain's Jambalaya Mix (Reduced Sodium). Stir.

Add diced peppers and onion. Stir.

Add stewed tomatoes. Stir.

Add diced smoke turkey sausage. Stir.

Cover and place in microwave. Microwave for 25 minutes, stirring occasionally. Let stand 5 minutes before serving.
