Very Veggie Quiche

Ingredients

    * Onions, raw, 126 grams
    * Garlic, 6 grams
    * Broccoli, fresh, 83 grams
    * Asparagus, fresh, 101 grams
    * Spinach, fresh, 35 grams
    * Artichokes, frozen, 50 grams
    * Trader Joe's Uncured Bacon - 2 slices, 2 serving
    * Phil's Fresh Egg, 1 serving
    * Milk, 2%, 1.25 cup
    * President Swiss Cheese, 2.5 oz
    * salt and pepper to taste

Directions

Preheat oven to 350*

Cut all veggies into bite size pieces and sautee in a small amount of olive oil.

Combine eggs, milk, cheese, bacon, and seasonings.

Pour veggies into greased casserole dish and top with egg mixture.

(Easily made vegetarian by eliminating the bacon)

Bake approximately 40 minutes
