White Wheat Strawberry Muffins



Introduction

This is a revised recipe from the disaster I made last time. I changed around the leavening ingredients and used applesauce in place of butter or oil and honey instead of sugar. Ingredients

    2.25 cups sifted white whole wheat flour
    3 tsp baking powder
    1/2 tsp salt
    1/2 tsp baking soda
    1 egg
    1/4 cup applesauce (unsweetened) I used N.P organic strawberry applesauce
    1/4 cup honey
    1/2 cup milk
    1 tsp vanilla
    1 cup crushed strawberries ( I just used a potato masher, which gives some nice chunks in the muffins)

Directions

Sift flour, then measure out. Stir flour, baking powder, salt, and baking soda together in a large bowl. Set aside.
Beat egg. Beat in applesauce and honey until well mixed. Add milk and vanilla and mix well. Make sure the honey is incorporated and not a lump in the bottom of the bowl. Stir wet ingredients into dry ingredients until just flour is just moistened, making sure to scrape the bottom of the bowl. Fold in strawberries. Let batter sit 10 minutes. Meanwhile, preheat oven to 375. Grease muffin tin. Fill muffin cups (this will fill 12 almost to the top, or make about 14 smaller muffins if you like). Bake 20 minutes, or until tootpick inserted in cent comes out clean.
