Introduction

This is a healthy recipe for satisfying a craving for southern cooking while getting a serving of vegetables in at breakfast time. This is a healthy recipe for satisfying a craving for southern cooking while getting a serving of vegetables in at breakfast time.
Number of Servings: 1

Ingredients

    1 packet of plain instant grits
    1 egg white
    1 whole egg
    1 handful of spinach
    1 tsp chopped garlic
    1 tbs water
    Cooking spray
    1 tbs shredded cheese
    Salt and pepper

Directions

Makes 1 single serving

1. Prepare grits as directed on the package.

2. Add garlic, water and spinach in sautee pan and cook on medium high heat until tender and wilted.

3. Spray cooking spray in non-stick pan over medium heat. Beat egg and egg white together in a bowl, then pour into nonstick pan. Scramble eggs.

4. Mix grits, spinach and eggs together. Add salt and pepper to taste.

5. Sprinkle with shredded cheese.

  • I love grits, I love spinach. Unable to locate my casserole recipe, I used this for my morning breakfast. Omitted the salt since instant grits are high in sodium. No shredded cheese; used mozzarella stick. A definite keeper! - 7/2/14
