Protein Packed Pancake

Introduction

This is a high protein pancake thanks to the eggs and cottage cheese (however slightly high in sodium). It's lower in carbs than your average pancake, and it uses Spelt Flour instead of wheat, so it's easier for most people to digest. Ingredients

    1/2 cup of 1% Cottage Cheese
    1 Large Whole Egg
    4 Egg Whites
    1 tsp Vanilla Extract
    1 tsp Cinnamon
    1/2 cup of Rolled Oats
    1/2 cup of Spelt Flour

    I like to use a pat of butter on my griddle beforehand to keep the pancake crispy on the outsides. This adds a little bit of fat of course. For a topping I like Organic Maple Syrup (2tbsp). The butter and maple syrup add 140 calories, 27g carbs, and 4 g of Fat.

Directions

Blend all ingredients together. I have a Magic Bullet so I blend everything to a thinner consistency or the oats and cottage cheese give a funny consistency. You can use a food processor. Cook on a non-stick griddle on Medium heat as you normally would cook a pancake, keeping an eye on them and flipping when golden.

I love to spread a bit of peanut butter on each one and top with banana slices and Organic Maple Syrup. I say it's one serving because it makes 3-4 good sized pancakes, but you can always share...
