Strawberry Glazed Chicken with Strawberries

Ingredients

2 whole chicken breasts (cut in half)
Olive oil divided
1 shallot minced
1 chicken boullion cube in 4 oz water + 1 tsp corn starch
3 Tbsp Strawberry preserves
1.5 Tbs Balsamic Vinegar
12 chopped strawberries
Green Beans, fresh
Directions
In large frying pan:
Saute chicken in 1.5 tbsp of olive oil (or use grill) til cooked through (about 4 minutes each side).
remove from pan and chop into bite size pieces.
Add 1.5 Tbsp of olive oil. chop up shallot and saute.
Dissolve 1 tsp of corn starch in 1/2 c. of consomme and add to pan.
Add 3 Tbsp of Jelly
Add 1.5 Tbsp of Balsamic vinegar.
Once thickened (about 1 min) return Chicken to pan and mix until chicken is glazed.
prepare fresh green beans by boiling a pot of water and boiling them for about 4 - 5 minutes (don't overcook).
Add green beans to the pan and coat with sauce.
Slice up fresh strawberries and top the greenbean & chicken mixture.
Serve immediately.
(If you don't have greenbeans, make as directed without them and serve over a bed of baby spinach.)
