Edamame pate

Number of Servings: 4

Ingredients

    * 1 1/4 cups frozen shelled edamame, thawed
    * 1/2 cup walnuts
    * 1/3 cup basil leaves (packed)
    * 1 green onion, chopped
    * 3 Tbs. lemon juice
    *1/2 roasted red pepper, chopped
    * 2 small cucumbers, thinly sliced
    * 5 baby carrots
    * 3 tbsp vegetable broth

Directions

Puree edamame, carrots, walnuts, basil, green onion and salt in food processor. With motor running add lemon juice and broth until smooth. Fold in peppers and cucumbers. Serve with crackers and raw veggie dipppers.
