1 Jalapeno pepper or 1/2 Anaheim pepper 1/2 c. raw onion 1/2 c. raw red ripe tomato 1 tbsp fresh cilantro 1 raw lime wedge 1 dash salt 1 dash black pepper
Seed peppers. Chop all vegetables finely, including cilantro. Mix them all in a bowl, and sqeeze the lime wedge over the mix. Add salt and pepper to suit your tastes, and stir. It is ready to use --as a salsa with chips, or to put in cooked rice, beans or corn as seasoning. Makes two half cup servings. Note: recipe is easily adjusted for parties, picnics etc.
