Sauteed Baby Artichokes

Introduction

An easily expanded recipe - great way to eat fresh baby artichokes without much fuss! An easily expanded recipe - great way to eat fresh baby artichokes without much fuss!
Number of Servings: 1

Ingredients

    4 baby artichokes
    2 cloves of garlic
    1 cup of chicken stock or white wine
    1 tblsp. olive oil

Directions

Trim, peel, and halve the artichokes, rubbing the exposed halves with lemon juice to keep them from turning brown. Slice the garlic lengthwise.

Heat the olive oil in a pan until it is hot but not smoking. Put in the garlic and artichokes. Cook, stirring frequently until the artichokes acquire a nice golden brown color. Add the stock or wine, cover, and let simmer for 15 minutes or until the artichokes are tender.

After 15 minutes, remove the lid, increase the heat to a boil for 3 minutes or until the juices have thickened, and serve! Garnish with salt and pepper to taste.
