Roasted Vegetable Pita Sandwich Filling

Introduction

These veggies are great stuffed in pita bread halves with hummus. These veggies are great stuffed in pita bread halves with hummus.
Number of Servings: 6

Ingredients

    3 small zucchini
    1 c grape tomatoes
    4 oz broccoli
    1 sweet red pepper
    8 oz portabella mushrooms
    1 medium onion
    2 tbs olive oil
    1 tbs chopped garlic

Directions

Slice zucchini, sweet red pepper, onions and mushrooms. Broccoli should be in small pieces and tomatoes are left whole. Place the veggies on a baking sheet and drizzle with oil. Sprinkle with garlic. Bake in a preheated 425 degree oven for 15 minutes.
