Tamara's Hot and Sour Soup

Number of Servings: 7

Ingredients

    6 cups of Chicken stock, home-prepared
    6.5 ounces of Portabella Mushrooms fresh chopped
    6.5 ounces of Mushrooms, fresh chopped
    1-3 tsps of red pepper flakes
    1 tsp Sesame Oil
    3 tbls Corn Starch
    1 lime (fine zest and squeezed) Lime Juice
    2 tsp Garlic (use food processor)
    1/4 cup fresh chopped ginger (use food processor)
    6 - 8 ounces of chicken breast - no skin
    1 cup Scallions, raw, chopped
    salt and pepper to taste (as the homemade chicken stock has no salt in it you will most like need to add some kosher salt)

Directions

Makes about 7 - 2 cups servings.

1. Use a heavy stock pot and add:
6 cups of Chicken stock, home-prepared
6.5 ounces of Portabella Mushrooms fresh chopped
6.5 ounces of Mushrooms, fresh chopped

2. once the mushrooms have started to soften add the next few ingrediants.
1-3 tsps of red pepper flakes
2 tsp Garlic (use food processor)
1/4 cup fresh chopped ginger (use food processor)

3. allow to simmer for a few more minutes to help the flavors combine.
4. Now add the combined corn starch and lime juice/zest and stir into the pot.
3 tbls Corn Starch
1 lime (fine zest and squeezed) Lime Juice (should equal about a 1/4 cup)

5. allow this to boil for a minute until it thickens.

6. add the chicken that has been cut into small pieces.
6 - 8 ounces of chicken breast - no skin

7. Add the last few ingredients and serve hot.
1 tsp Sesame Oil
1 cup Scallions, raw, chopped
salt and pepper to taste (as the homemade chicken stock has no salt in it you will most like need to add some kosher salt)
