Hot-n-Spicy Vegetarian Chili

Introduction

Number of Servings: 6

Ingredients

    2 Tbsp olive oil
    1/2 med. onion
    2 bell pepper strips
    5 med. baby carrots, grated
    1 Tbsp garlic

    2-3 cups water
    1/2 cup lentils

    1/3 cup tomato sauce
    1/4 cup tomato paste
    2 Tbsp jalapenos
    3/4 cup frozen yellow corn

    Garlic powder, oregano, chili powder, cumin, and salt to taste

Directions

Makes approx. six 1/2 cup servings
Heat olive oil in a large saucepan over medium heat. Saute onions, carrots, bell peppers, and garlic until soft.
Add water and lentils. Cover with a lid and let simmer for 20-30 minutes.
Add tomato products, jalapenos, corn and spices.
Cook for another 10 minutes, or until corn is cooked.
