Ingredients

    Mori-Nu, Tofu, silken, lite firm, 12 oz (1 box)
    Hellmann's Light Mayonaise (US), 1/2 cup
    Celery, raw, 1 stalk, medium (7-1/2" - 8" long)
    Private Selection (Kroger) Dijon Mustard, 1/4 cup
    Egg Yolk, equivalent 2 large (use powdered to avoid use of raw egg yolks)
    *Splenda, 1/3 cup
    Now Foods Stevia, 3/8 teaspoon (or use another 1/3 cup Splenda)
    Cider Vinegar, 2 tbsp
    Water, tap 1/2 cup
    Salt, 1/8 teaspoon
    Bob's Red Mill Xanthan Gum, 1/4 teaspoon

Directions

Combine tofu and light mayonaise in food processor or blender, blending until smooth. Add remaining ingredients except stevia and xanthum gum and blend until celery is pulverized and all ingredients are well mixed. Slowly add stevia and xanthum while blender is mixing.
