Introduction

Bacon and greens, YUM. (May substitute any kind of green. Kale, Spinach, Collard, turnip...) Bacon and greens, YUM. (May substitute any kind of green. Kale, Spinach, Collard, turnip...)
Number of Servings: 4

Ingredients

    Mustard Greens, 16 oz bag
    4 oz Natural Bacon (about 4 slices)
    1/2 tsp sugar
    1/2 tsp salt
    1/4 tsp black pepper
    1 Tbsp. reserved bacon fat
    2 cups water
    *1-2 tablespoons dried onion (optional)

Directions

Brown bacon in medium or large pot. Remove bacon, reserving 3 teaspoons of grease. Add remaining ingredients except greens. Bring water mixture to a boil. Add greens. Bring to a boil again. Cover pot and cook for 35 minutes over medium heat. Serve hot with crumbled bacon on top.

* For even healthier greens substitute 1/4 cup olive oil OR two cubes of beef bouillon for bacon.
